The salt comes from J.Q. Dickinson Salt works whose brine is naturally sourced from an ancient, untouched sea called the Iapetus Ocean (predating the Atlantic) trapped below the Appalachian mountains. J.Q. Dickinson salt is free of contaminants and heavy metals that may be found in other oceans. Gleaned from the earth by an underground brine aquifer, the salt is then processed naturally using the power of the sun and gentle mountain breezes. The result is a beautiful crystal that enhances the flavor of any dish.

The Ramps provided by Digger Jays come from old patches in the wild Appalachian Mountains. These patches are in a 100% natural environment far away from human pollutants such as Herbicides, Pesticides, or Fertilizers. All Ramps are hand dug on private land by foragers who care about the land and their environment. They are good stewards of the Ramp patches harvesting in a sustainable manner to ensure these patches continue to produce for generations to come.

Once the Ramps are harvested they are cleaned by hand and cut into pieces for drying. The drying process begins by placing the Ramps on very large drying sheets. These drying sheets, full of Ramps are also processed naturally using the power of the sun and gentle mountain breezes. Once dried, the Ramps are sent to J.Q. Dickinson where they do their magic professionally blending the Salt and Ramps together to produce a fantastic product (Ramp Salt) unlike any other in the world.
